FOHO ERMERA | Wet-hulled – Espresso roast
Foho: in Tetum, the language of Timor-Leste, it simply means mountain. And that is exactly where this coffee lives. High in the Ermera district, at 1400 metres above sea level, smallholder farmers tend groves that have grown in volcanic soil for generations, shaded by the same mist-wrapped ridgelines that gave this land its name. Catimor, the variety at the heart of this cup, is a child of the highlands itself, is a natural cross between the compact Caturra and the celebrated Híbrido de Timor, a hybrid born on this very island. What it carries in its genes is resilience: a plant built for altitude, humidity, and the particular wildness of Timorese terrain.
Processed through wet-hulling (locally known as giling basah) the beans are de-parchmented while still moisture-laden, giving them direct contact with the humid mountain air through final drying. The method is demanding and deliberately old-world, producing a cup of uncommon weight: a syrupy body, mellow acidity, and a long, nutty finish with dark chocolate and dried fruit threading through.
